Are you a visionary chef with a passion for creating simple yet surprising dishes that celebrate global influences and sustainable ingredients? dohō, a modern American neighborhood bistro, is seeking a talented and inspired Chef de Cuisine to lead our culinary team and bring our menu to life. About dohō:Nestled in the Mt. Airy section of Philadelphia, dohō is poised to become a destination for food enthusiasts from across the region. Our will be menu will feature: Small plates(4-6 items) highlighting vibrant flavors and unexpected combinations. Pasta dishes(2-3 options) crafted with care and creativity. Large plates(3-5 offerings) showcasing bold yet refined culinary techniques. Desserts(2-3 selections) offering a sweet finish with sophistication (we have a pastry chef) Designed to promote communal dining and sharing, our dishes encourage guests to connect over a shared culinary experience. Complementing the menu is a dynamic craft cocktail program and a commitment to locally sourced, sustainable ingredients. Our ambiance features earth tones, lush greenery, and modern rustic touches, with tableware sourced from Felt & Fat and a thoughtfully curated music selection blending electronic, with influences from many genres including dub, reggae, jazz, and Latin music. Position Overview:As Chef de Cuisine, you will play a pivotal role in defining the culinary identity of dohō. This is an opportunity to lead with creativity and innovation while fostering a collaborative and respectful kitchen culture. Key Responsibilities: Work closely with the Executive Chef to create menus, develop recipes, and test recipes. Collaborate with local purveyors and farmers to source high-quality, sustainable ingredients. Hire, train, and build a strong and cohesive culinary team. Manage kitchen operations, including hiring, training, and mentoring staff. Oversee inventory, purchasing, and cost control to ensure profitability. Maintain high standards of cleanliness, organization, and food safety. Provide an exceptional dining experience for our guests. Qualifications: Proven experience as a Sous Chef or Chef de Cuisine in a high-quality, fine dining restaurant. Micheline or Beard Awarder restaurant experience preferred. Strong background in fine dining with an emphasis on French techniques. Expertise in modern American cuisine with global influences. Passion for sustainability and locally sourced ingredients. Strong leadership and team-building skills. Exceptional creativity and a keen eye for detail. Ability to thrive in a fast-paced, dynamic environment.
